Being the daughter of a woman from the south and raised as a G.R.I.T.S. (Girl Raised In The South) although I wasn’t actually raised there… I too love me a “mess o’ greens”…

I don’t think I’ve ever seen red beet greens before…I’ve seen ‘red veined’ beet greens but not completely red… Very pretty and I’m sure they were tasty!

With a father from Mississippi, and spending many years of my life there as a young wife and mother, I am also a G.R.I.T.S :) I wrote this blog and posted the pictures, wondering if I was the only one who was surprised with the color! Happy to know you were also surprised. Yes, they were very tasty! I was also told they are good chopped or sliced up raw in a salad, so I tried that and it was good, too.

Yum…I would love to try them in a salad…Wouldn’t that be pretty mixed in with other salad greens?

BTW, speaking of beets…I’ve been cooking them quite a bit lately and am collecting some great, but quite simple, recipes…

I love beets! I’ll take any recipes you have, although my favorite is simply steamed with a little butter. I’ll ask my neighbor which variety he plants that produces the red leaves. Yes, they are beautiful in a salad, and have a slightly different texture than what I imagined.

I’ll send you links to my recipes via e-mail… Yes, would love to know what variety they are! Mahalo
